Anyone know if you can freeze risotto? I know it's not going to be quite the same, but would it hurt it much?

Won't hurt a bit. Of course you have to defrost it and reheat it for best chewing pleasure, unless you like risotto-flavour ice-lollies... :-)

according to my friendly chef:

"Reheat in a pan, stir in some more parmesan and a little milk or cream."

I had a lovely risotto last night... Hmmm risotto.
