Well, there're all these ways of actually collecting SMS at the moment - conversion to email, moblogs, and the sms_to_lj thing. So sooner or later, someone is going to go to work punching out a novel with their thumbs in SMS. It'll be difficult, certainly, especially since they'll only ever be able to see the line they're writing at the time, but no more difficult than a novel without the letter e, for instance.
If you were to do such a thing, there would be no way to prove you did it exclusively with your thumbs. There are too many ways of getting the SMSes to your phone to be able to refute someone who says "You just typed it in to your PC and sucked it across with the {Nokia development kit,O2 website, whatever}."
Yeah, someone might do it, but what a singularly unsatisfying achievement that would be:
— Look! Novel-length SMS! All with these thumbs! — I don't believe you. — Oh. *bursts into tears*
